Boxty Potato Pancakes!

We are already in February and the year started in Ireland with cold and snow. In some places it snowed a lot, but here on the south of the island it wasn't so hard. But we were able to enjoy a little the eternal charm of the little white snowflakes.
After the snow we had the Rachel storm which brought winds of up to 150 Km/h. We had never faced so strong winds since we arrived. We even had a cover (this one you can see on the picture below) to protect some garden furniture. Even with the cover tied up with knots and with stones to make it stable the strenght of the wind managed to remove it and fly away... we were not able to recover it anymore!
This beginning of the year is colder than last year. The temperatures are around 2 or 3 Celsius, and the real feel is usually below zero. But on the other hand we didn't have the strong floods of 2014.
Reading Irish culinary books, we noticed in a few counties, mainly on the North, one recipe is made on Saint Brigid's Day on February 1st. Saint Brigid is a patron of Ireland, just like St. Patrick. One curious cross represents the Saint, we spoke about it in more details here.
The recipe is called Boxty Potato Pancakes. it is like a regular pancake, but the different thing is that it takes potato in the dough. It is a little difficult the cooking, because the dough takes a long time to be well done.
