Ceia de Natal Irlandesa - Irish Christmas Supper

After taking strolls by some of the christmas markets (here and here) and talking about some of the typical traditions of this period of the year (here). Today we will see what is served on the Christmas supper on the Emerald Isle. On December 24th, the tradition is not the supper as in many other countries. On this day the Irish usually go to the midnight mass. Even people who don't go to mass very often along the year, go to mass on the 24th.All festivities are left for the 25th itself.
The starter could be a good soup or a Prawn Cocktail.

The roasted turkey reigns absolute as the most consumed meat. Very common is the turkey crown, which is the bird without legs and wings - this way the breast is easier to be carved. It is usually filled with stuffing made of bread, butter and spices.
Outra opção de ave que pode ser usada é o ganso.
Aqui em Cork uma carne muito comum servida é a Spiced Beef onde a carne é marinada em temperos por um bom tempo e depois cortada em fatias bem finas, lembra um pouco o pastrami e servida com o soda bread. Tradicionalmente é servida um dia depois de Natal, no feriado de St Stephens, no dia 26 de dezembro.
And to moisten the meat you can have a good gravy, brown meat based.Another bird option that can be used is the goose.
Here in Cork it is served a very common meat called Spiced Beef, where the meat is marinated in spices for quite a while, and later cut in thin slices. It reminds the pastrami a bit, and it is served with soda bread. It is traditionally served a day after Christmas, on St. Stephen's holiday, on December 25th.

The side dishes always bring loads of vegetables. Of course the potatoes are always present, like the grated potatoes. Another common tuber are the parsnips. You can also find cauliflower with cheese, glazed carrots and red cabbage, a typical Christmas recipe that takes, besides cabbage, apples, onions and red fruits jam. And you can't miss the brussels sprouts.

A classical sauce of all tables is the cranberry sauce which is used for everything. Even for sandwiches!A tradition in many homes around here are the cheese boards, with brie, cheddar and blue cheese.

The Christmas Pudding also need to be part of it. It is a kind of fruit cake and it is soaked in some kind of alcoholic drink of very dark color, usually served with a milk based cream.Once it takes a lot of alcohol, it can be flambé. Have a look here on the post we did about this classic Irish.

And you can also find the christmas cake which is some kind of current cake dough and bringing also dried fruits like dates and dehydrated grapes, usually with a white topping.
And for those who don't like dry fruits, there is the Yule Log, a kind of roll with chocolate sponge dough, stuffed with cream.
Of course these are only a few classic dishes on the Irish tables. There are many others and the options can vary from family to family.
